The enjoy Bolivia page for Santa Cruz Restaurants doesn't seem to offer any restauratns there.

However they do note that you need to have a tastes of the "majao" a rice stew, "charque" dry meat, and some other local dishes.

Maybe they will ad some actual restaurant listings soon.
